Harvest Fruits in Spiced Berry Cordial

This easy-to-make, low fat dessert is nutritious, colourful and full of delicious seasonal flavours.

4 tbsp Bottlegreen Spiced Berry Cordial
1 cinnamon stick
1 star anise or 3 cloves
300ml (1/2 pint) unsweetened apple juice
50g (2oz) golden caster sugar
225g (8oz) plums, halved and pitted
2 eating apples, cored and sliced
2 dessert pears, peeled, cored and sliced
100g (4oz) blueberries
4 generous scoops Bottlegreen Spiced Berry Sorbet, Ginger & Lemongrass Sorbet or Elderflower Sorbet

1 Put the Spiced Berry Cordial, cinnamon stick, star anise or cloves into a large saucepan with the apple juice and sugar. Heat gently until just simmering.

2 Add the plums, apples and pears to the saucepan and simmer gently for about 12-15 minutes, or until the fruits are tender. Remove from the heat and add the blueberries. Allow to cool for 10 minutes.

3 Remove the cinnamon stick and star anise or cloves. Serve the fruit salad, accompanied by scoops of Spiced Berry, Ginger & Lemongrass or Elderflower Sorbet.
SERVES 4
Cook’s Tip: Serve the fruit salad on top of warmed waffles or Scotch pancakes for a more filling dessert. Don’t forget the sorbet!
