Hot Tropical Fruit Pancakes with Ginger & Lemongrass

This is a simple, nutritious dessert that all the family will love.

4 tbsp Bottlegreen Ginger & Lemongrass Cordial
300ml (1/2 pint) pure exotic fruit juice
2 level tsp cornflour, blended with a little extra fruit juice
1 small fresh pineapple, peeled cored and chopped
1 mango, peeled, pitted and sliced
1 slice melon, peeled, deseeded and chopped
1 banana, sliced
1 passion fruit
8 thin pancakes
8 scoops Bottlegreen Ginger & Lemongrass Sorbet

1 Put the Ginger & Lemongrass Cordial into a saucepan with the fruit juice. Heat gently until just simmering. Add the blended cornflour and stir until thickened.

2 Add all the fruits and simmer for 2 minutes, then remove from the heat.

3 Warm the pancakes according to pack instructions (or make a batch of home-made – see below).

4 Serve 2 pancakes per person. Top with the hot fruits and serve with scoops of Ginger & Lemongrass Sorbet.

Cook’s Tip: To make your own pancakes, beat together 100g (4oz) plain flour with a pinch of salt, 1 large egg and 300ml (1/2 pint) of milk until smooth. Use to make 8 small, thin pancakes by cooking in a pancake pan or small frying pan with a little oil.
