Raspberry Lovage Indulgence

This lovely pudding is perfect for a romantic supper or Valentine’s Day dessert. It’s excellent for a girls’ night in too! (Just double up the quantities for 4).

4 tbsp double or whipping cream
1 raspberry or blueberry muffin
125g (5oz) frozen raspberries or forest fruits, partially thawed
4 ratafia or macaroon biscuits, crushed
4 scoops Bottlegreen English Summer Sorbet
4 tbsp Bottlegreen Raspberry Lovage Cordial

1 Whip the cream in a chilled bowl until it holds its shape.

2 Tear up the muffin and share it between 2 attractive serving glasses.
Spoon the fruit on top. Reserve a few of the crushed ratafia or macaroon biscuits, then sprinkle the rest into the glasses. Add the scoops of English Summer Sorbet, then spoon 2 tbsp of Raspberry Lovage Cordial over each one.

3 Share the whipped cream between the desserts and sprinkle the reserved crushed biscuits on top. Serve immediately.
SERVES 2
Cook’s Tip: If you can’t find amaretti or macaroon biscuits, simply use 2 crushed digestive biscuits instead.
